I love a snack that curbs my sweet craving AND is good for me too! These Energy Bites are one of my FAVORITES! They taste great, and are packed full of protein and nutritious ingredients to keep your energy levels up, stabilize blood sugar, and these bites contain flax, which is believed by some to be a milk boosting food!
They taste like raw cookie dough- chunky chocolate chip cookie dough! They are really simple and fast to make. Keep these in a sealed container in your fridge and enjoy for a week. They are also really easy to make vegan, gluten, or dairy free! WARNING: You may want to make a double, or even triple, batch of these. These are kid and husband approved, and they don't stick around for long.

Recipe:
A few simple, pantry stable ingredients is all you need to make these tasty energy bites! Makes about 24 bites. Store in the fridge and enjoy up to a week.
Ingredients:
1 3/4 cup Rolled Oats 3/4 cup Peanut Butter 1/3 cup Honey*, or Agave (*infants under 1 shouldn't consume honey) 1/3 cup Chocolate Chips (Bonus: The chocolate chips in the link are dairy free!) 1/8 cup Flax Seeds, whole 1/8 cup Sunflower Seeds, unsalted and raw 1/8 cup Chia Seeds
Directions:
Step 1. Put all ingredients in a large glass bowl (these are the ones I use!). Step 2. Stir to combine. You may need to mix it with your hands to fully incorporate all of your ingredients. If you use natural peanut butter, and it's too hard to easily mix in, you may need to warm it in the microwave for a few seconds to help soften it up. Step 3. Once everything is well mixed, cover it with plastic wrap and stick it in the fridge for an hour or two. Making it cold will help when it comes to rolling them into bite size chunks. If you're in a hurry, stick it in your freezer for about 30 minutes.
Step 4. When your ingredients are fully chilled, scoop out about a tablespoon worth of the mixture and roll into a ball in your hands. Repeat until your mixture is gone. You should end up with about 24 tablespoon sized bites.
Step 5. Enjoy immediately or store in a sealed container in your fridge for up to a week! Share your pictures below after you create your own yummy bites!
